Cream of Coconut

I used to buy cans of cream of coconut as pictured below, but it's recently gotten so expensive that I decided to make my own.  This is good in smoothies or daiquiri's and it's an ingredient in a couple of my recipes.


Recipe:

1 1/2 C coconut milk
1 1/2 C white sugar
1/8 tsp salt
1/2 tsp Guar gum

Mix sugar, salt and Guar gum together in a small saucepan with a whisk.  Whisk in coconut milk.  Cook over medium-low heat while stirring constantly until all sugar is completely dissolved, but don't let it boil.  Remove and cool.
