Bread Stuffing

This recipe I have adapted from two different recipes.  I didn't used to like bread stuffing when I was young and it took me quite a long time to enjoy it.  But now Thanksgiving wouldn't be the same without it!



Recipe:

7-8 C cubed bread
1/4 to 1 C butter (depending on what you're using it for)
2 C small chopped onion
1 1/2 C small chopped celery
3 Tbs chopped fresh sage or 1 1/2 tsp dried
1 Tbs chopped fresh Thyme or 1 tsp dried
1 1/2 tsp black pepper
1 tsp salt
4 eggs, mixed with fork
2 C small apple cubes
1 C dried cranberries or raisins

If baking the stuffing with a turkey, place bread cubes on two sheet pans and bake at 300°F for approximately 30 minutes until dried.  Cool and place bread in large bowl. Melt 1/4 C butter over medium or medium-high heat, add onion and brown for about 10 minutes.  Add celery and saute for about 3 minutes.  Add spices and saute for another minute.  Add to the bowl of bread cubes, along with the eggs, apple cubes and cranberries.  Stir to combine.  Place in the turkey roasting pan and form into a rectangle just big enough to place the turkey on and be a bed for the turkey.

 If not baking the stuffing with the turkey, do not dry the bread in the oven, increase the butter to 1 C and stir 1/3 of the bread cubes into the butter and veggies just before you add them to the rest of the ingredients.  Put in 9x13 pan, cover and bake at 350°F until lightly browned.
