Zucchini Bread
This is my mom's zucchini bread recipe that I've adjusted a little. I ate a lot of zucchini bread growing up and it's still delicious to me.
Recipe:
1 C sucanut or brown sugar
1 C white sugar
1 C oil
3 eggs
1 Tbs vanilla
2 C shredded zucchini
1/2 C applesauce, peaches or orange juice (optional)
1 tsp salt
1 tsp soda
1 tsp baking powder
1 Tbs cinnamon
3 C flour (I use half soft whole wheat)
1 C coarsely chopped walnuts
Cream sugars and oil together, add eggs and vanilla until well mixed. Mix in zucchini and applesauce. Add dry ingredients and mix well. Add nuts last. Divide equally among three greased bread (approximately 8 x 4) pans. Bake 300°F for approximately 45-60 minutes.
