Quinoa Patties


Recipe:

2 1/2 C quinoa, cooked
4 eggs, beaten
1/2 tsp salt
2 Tbs dried chives
1 onion, chopped fine
1/2 C fresh Parmesan, grated
4-6 cloves garlic, chopped fine
1/4 tsp cayenne pepper
1 C bread crumbs or more
Oil

Combine quinoa, eggs and salt. Add chives, onion, cheese, garlic and cayenne and combine. Stir in breadcrumbs. Heat a little oil in frying pan on medium-low and drop by spoonfuls into pan. Smash each spoonful down. Cover pan and cook until browned on both sides.
