Sausage, Kale & Potato Soup
I adjusted this recipe I found online. This soup is so delicious! I have been on a very restrictive diet for over 4 months now and this is one of the few real meals I have really enjoyed!
Recipe:
2 tablespoons oil12-16 ounces Dana's Italian Sausage or sliced and halved chicken sausage links or Kielbasa
1 cup diced sweet onion
1 cup diced sweet onion
2 large cloves garlic, minced
2½ pounds cubed red potatoes with skin on
4 cups chicken stock
2-6 cups kale, stem removed and torn or chopped small
2¼ teaspoons salt

¼-½ teaspoon red pepper flakes
25-26 ounces coconut milk (Thai Kitchen is best so far)
Instant Pot
1. Turn Instant Pot to 'saute' mode and add in the oil.
2. Add in the sausage and onion and saute for 5-8 minutes and then hit 'cancel' button.
3. Put the garlic, potatoes, kale, salt, pepper flakes and broth into the Instant Pot, seal the lid and close the steam valve.
4. Turn to 'pressure' mode on high pressure and set time to 10 minutes.
5. When timer goes off, do a quick release of the steam. Stir in the coconut milk.
6. Add a little more salt and pepper if needed.
Stove Top
1. Heat oil in a stock pot over medium heat.

3. Add in the rest of the ingredients, bring to a boil and reduce to a simmer. Cook until potatoes are falling apart tender, at least 30-60 minutes.
4. Stir in the coconut milk.
