No-Bake Brownie Bites
I adjusted this sugar/grain/dairy-free recipe I found online. This is the first time in over four months I've eaten a dessert. These are delicious!
Recipe:
1 cup whole walnuts or pecans
¼ teaspoon salt
¼ cup cocoa
½ cup almond or peanut butter (natural with no sugar)
⅓ cup granulated sweetener of choice (I use ½ cup Allulose or ⅓ cup Monk Fruit/Allulose blend)
1-2 tablespoons coconut flour if batter is too thin
1-2 tablespoons water if batter is too crumbly
½ cup chocolate chips of choice (I use sugar and dairy free)
¾ teaspoon vanilla

Finely ground nuts (almonds or pecans) to coat them in
1. In the bowl of a food processor add the walnuts and salt. Process on high for 5 to 10 seconds, or until the nuts are broken up into small pieces.
2. Add the cocoa, nut butter, vanilla, and sweetener. Process until well combined and batter starts coming together. Add coconut flour or water, one tablespoon at a time, as needed to achieve the right consistency.
3. Pulse in the chocolate chips.
4. Line a baking sheet with parchment paper.
5. Roll the dough in your hand to make approximately 25 balls, coat them in the finely ground nuts and place them on the parchment paper.
6. Place the baking sheet in the freezer for 10-15 minutes before serving.
