Royal Icing
This is decorator's frosting that hardens over time.
Recipe
3 ounces egg whites
4 cups powdered sugar
1 teaspoon vanilla
In a bowl beat the egg whites and vanilla until frothy. Add powdered sugar gradually and mix on low until sugar is incorporated and mixture is shiny. Turn speed up to high and beat until mixture forms stiff, glossy peaks. This should take approximately 5 to 7 minutes.
Add vanilla extract and food coloring, if desired. For immediate use, transfer icing to pastry bag and pipe as desired. Store in airtight container in fridge for up to 3 days.
