Orange Pudding Salad
I love the texture of this salad, but it's more a dessert than a salad!
Recipe:
1 large package desired flavor jello (I like orange)
1 large package cook & serve vanilla pudding
1 small package cook & serve tapioca pudding
3¼ cups water
16 ounces Cool Whip or Redi-Whip at room temperature
58-87 ounces desired fruit*
In a small bowl, mix the dry puddings and jello together. Bring water to boil and then add whisk in the dry mix. Boil and stir for 1 minute. Cool completely, stirring occasionally. Mix the pudding and Cool Whip together well and then fold in the fruit.
*I usually use fruit that matches the jello flavor, like strawberry slices with strawberry jello. I use canned mandarin oranges with orange jello, but make sure you drain the liquid out of any canned fruit you use.
