Dana's Chicken Stew

I bought a bunch of stewing hens from a farmer friend and this recipe is the result. Absolutely delicious!


Serving: 8-10

Recipe:

1 stewing hen
Water
4 or more carrots
2 celery ribs
1 onion
4 garlic cloves
Fresh herbs (sage, basil, Thai basil, oregano, thyme, parsley)

Make sure hen is cleanly plucked and then rinse in cold water. Put hen in crock pot and fill with water almost full. Add carrots, celery, onion, garlic cloves and sprigs of fresh herbs. Cook on high for 8-10 hours or until the meat is tender. Remove hen to a plate to cool and then pick off meat. You can use the bones to make chicken stock. Strain the broth into a stock pot and discard the solids. Spoon off as much grease as possible from the top of the broth.

Final:
Carrots
Potatoes
2 tablespoons minced garlic
3-4 tablespoons chicken bouillon
Black pepper to taste
5-6 tablespoons cornstarch
1 cup heavy cream

To the broth, add as many carrots and potatoes as you like. Add the chicken pieces, minced garlic, chicken bouillon and pepper and cook until veggies are tender. Mix the cornstarch with the cream and stir into the broth. Bring to an almost boil until cornstarch thickens, stirring frequently.
