Grilled Chicken with Basil Butter
I got this recipe from a magazine. It was a big hit with the family and very simple.
Recipe:
4 thinned chicken breast halves
3/4 tsp fresh ground black pepper
1/4 C melted butter
1 tsp dried chopped basil
1/2 tsp salt
Basil Butter
1/4 C softened butter
3 Tbs basil leaves, chopped
1 Tbs grated Parmesan cheese
1 small garlic clove, minced
1/4 tsp salt
1/8 tsp black pepper
Combine ingredients for basil butter and blend well. Place on a sheet of plastic wrap, form into a log and refrigerate. When needed, cut into 4 pieces. Or divide into 4 portions onto a plate and refrigerate until needed.
Press black pepper onto one side of each breast half. Combine butter, dried basil and salt. Brush each breast with butter mixture, grill until done, basting with the melted butter. Place each breast piece on 4 plates and top each piece with the basil butter.
