Chicken and Mushroom Sauce
I got this recipe years ago at a church function where they served a baked potato bar. Again, of coarse I've adjusted it but not much. It's very easy and quick to make and is good on rice as well as baked potato.
Recipe:
3 Tbs butter
1/3 C chopped green onion
4 oz fresh mushrooms, chopped
3 Tbs flour
1 C chicken broth
1/2 C cream
1/8 tsp black pepper
1/2 tsp salt
Scant 1/8 tsp ground nutmeg
1/4-1/2 tsp horseradish
2 C diced chicken breast
Melt butter in skillet over medium or a little higher and saute green onions, mushrooms and chicken until tender. Sprinkle with flour, stir and cook a minute. Gradually stir in broth and cream. Bring to boil stirring until sauce thickens. Season with spices and serve over baked potatoes or rice.
