Dana's Cream of Broccoli Soup

I got hungry for cream of broccoli soup and threw it together.  Super comforting and delicious!


Recipe:

1-1 1/2 pound (approx 6-9 cup) medium-sized broccoli florets
2 tablespoon butter
2 cans chicken broth (about 3 3/4 cup)
3/4 cup butter
3/4 cup flour
4 cup whole milk
1 cup heavy cream
1 1/2 teaspoon onion powder or 1 tablespoon granulated onion
1 1/2 teaspoon salt (half this if you use chicken bouillon to make your broth)
1/3 teaspoon fresh ground pepper
1/8 teaspoon nutmeg
1 teaspoon sugar

Sauté broccoli in 2 tablespoons of butter in stock pot.  Add broth, cover and simmer until tender.  Melt butter in saucepan, add flour and onion powder and allow it to cook for 1 minute.  Whisk in milk a little at a time.  Bring to boil for 1 minute, whisking constantly.  Add cream, salt, pepper, sugar and nutmeg and bring back to boil.  Pour into pot with broccoli and stir until there's no lumps.  Serve with cheese of choice (I prefer it with extra sharp white cheddar).

Hearty: 

1 pound chicken breast cubed and sautéed 
2 medium potatoes cubed and boiled
1 carrot grated

Season chicken well with salt and pepper. Boil potatoes juts until tender and immediately put in cold water. Add carrot to broccoli before cooking it. Add potatoes and chicken to broccoli and carrots after broccoli is tender.
