Dana's Banana Pancakes (Paleo/Whole 30)
I couldn't find a decent recipe online for these so I just made this up. These are a huge hit! I usually fry an egg to put on top and/or serve with fresh fruit, no syrup necessary!
Recipe:
2 eggs
1 large very ripe banana (or 1 1/2 medium or 2 small)
2-3 tablespoon coconut milk
1/8 teaspoon or a little more salt
1/2 teaspoon cinnamon or more
1/2 teaspoon baking powder
1 1/2 tablespoons coconut flour (or sweet potato flour)
2 tablespoon potato starch (or tapioca starch)
2 pinches monk fruit extract (optional, depending on the sweetness of the bananas)
Coconut oil for frying
Blend all together well. Preheat frying pan over med-low, add coconut oil to melt and cook pancakes when pan is hot. They take longer to cook than normal pancakes and will burn before they are cooked through if you cook them higher than medium-low.
Coconut flour absorbs a lot of moisture. If you put too much they will be dry even if they don't seem like it while cooking. The batter should be very pourable. They are a little hard to turn because the batter on top of the pancake doesn't get done as fast. Make sure you see bubbles at least around the edges before you try to turn them. It just takes a little practice knowing when to turn them.
