Dana's German Chocolate Cake Ice-Cream
½ tsp + ⅛ tsp agar agar
¾ C sugar
1 can sweetened condensed milk
1/16 tsp guar gum
1/16 tsp xanthan gum
1 C dry powdered milk
3 C whole milk (try 4)
6 C whipping cream (try 5)
2¼ C German chocolate cake batter
1 C pecan pieces, carmelized and dipped in semi-sweet chocolate
German chocolate cake pieces using recipe below. Freeze it and then cube it and add to the ice-cream frozen.)
⅓-½ C medium coconut shreds (toasted)
Makes approximately 5 quarts.
Batter Ingredients:
3 oz sweet (German) chocolate, coarsely chopped
¼ C boiling water (60g)
1 tsp vanilla extract
¾ C sugar

½ C unsalted butter, softened 112g
1 C sugar, or ½ C sugar and ½ C packed brown sugar 200g
2 egg yolks 37g
½ C buttermilk 120g
For a full German Chocolate Cake, double this recipe and to the ingredients add 4 egg whites and decrease chocolate to 4 oz.
