Non-alcoholic Raspberry Mojito

This is my favorite drink right now! It is so refreshing and just the right amount of sweet.


Recipe:

For 1 tall glass:
3-4 fresh raspberries plus more for garnish
5-6 fresh mint leaves
2 tablespoons simple syrup
Ice
¼ cup raspberry juice or you can use cran-raspberry juice
2 tablespoons fresh lime juice (around ½ large lime)
½ cup club soda or sparkling mineral water

In a tall glass, add raspberries, mint leaves and the simple syrup. Squish all with the back of a spoon well until the mint, simple syrup and raspberries are well-combined (you don't want the mint leaves to be too squished). Fill glass with ice. Add raspberry juice, then the lime juice, and then fill with soda.
Garnish with lime wedge or additional raspberries, if desired.

Simple Syrup
Combine 1 cup sugar with 1 cup water in a medium sauce pan. Heat over medium heat, stirring frequently, until sugar is completely dissolved. Allow to cool.

For 2 Gallons:
48-64 fresh raspberries
80 fresh mint leaves (1¾ ounce package)
2 cups simple syrup
½ bag ice
4 cups raspberry juice or cran-raspberry juice
2 cups fresh lime juice, approximately
8  medium-large limes
8 cups club soda or sparkling mineral water

Put ice in 2 gallon drink dispenser. Add the simple syrup, juices and club soda.  Place the raspberries and mint leaves in each cup following directions for single serving above.
