Sandwich Spread
This is my version of my favorite sandwich spread from a restaurant I love in southern Utah. It's not exactly the same but still very delicious!
Makes about enough for 25 sandwiches
Recipe:
6 ounces cream cheese, softened
1/2 cup carrot, minced
1 cup mild oil*
1 tablespoon garlic, minced
5 tablespoons mayonnaise
2 tablespoons dijon mustard
11/4 teaspoons salt
11/2 teaspoons sugar
1 teaspoon fresh dill, chopped
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped
1/2 teaspoon ground black pepper
1/4+1/8 teaspoon annatto seed powder or paste*
1/4 teaspoon dried green mango powder (amchur)
1 package true lime
1/4 teaspoon sumac
Blend all together on low and refrigerate overnight.
*Extra-virgin olive oil, Sunflower oil and Grapeseed oil are some good options.
*I get this at a local Mexican grocery
