Lime Vinaigrette

Adjusted to my liking from an online recipe, this vinaigrette is delicious drizzled on a layered bed of Romaine, arugula, sliced watermelon triangles, chopped pistachios, feta cheese and dashes of mild chili powder!


Makes about 3/4 cup

Recipe:
1/2 cup olive oil
1/4-1/3 cup fresh lime juice
1 small clove garlic, minced
1/8 teaspoon onion powder
1/4-1/2 teaspoon salt
2 teaspoons sugar or honey
1/8 teaspoon black pepper
2 mint leaves, minced

Mix all together until emulsified. Make a few hours ahead for best flavor.
