Perfect Grilled Chicken Breast
Very tasty chicken! Great for salads!
Recipe:
Chicken breasts cut the thickness you prefer
Brine
Fresh ground black pepper
Brine:
4 cups water
1/4 cup salt
1/4 cup sugar (optional)
Put chicken in a freezer resealable plastic bag and pound it to an even thickness of about 3/4 inch. Brine chicken for 30 minutes! Grill on medium-high (about 400-450°F) for 3-5 minutes on each side, peppering them as you go. If they aren't done by this time, turn heat to low, cover and grill, turning every 2 minutes, until they are 155-160°F (NO MORE unless you want them dry) in the thickest part. Remove from grill, cover with foil and let them rest 10 minutes before serving. They continue to cook during the resting period and will reach the safe target of 165°F.
You can use this brine for any chicken cooking method, such as baking them in a glass dish on 450°F for 15-20 minutes, covering with foil for a rest period as above, or pan sear over medium heat on first side and then turn down for searing on the second side, then cover to rest. You can also add any seasonings, herbs or vegetables to the brine for more flavor, like crushed garlic. Or you can season the chicken how you prefer.
