Lotus Blossom Cookies
I've been meaning to post this recipe for awhile. These are addicting! They have a mild sweet flavor, kind of like fortune cookies, with a super crunchy light texture. You will have to purchase a lotus blossom iron before you can make these. I got mine on Amazon. I got this recipe on-line after trying a couple of different ones.
Serving: Makes about 60 cookies
Recipe:
5 eggs
1 can coconut milk
1/2 cup water
2 cups sugar
4 cups rice flour (1 bag)
2-3 tablespoons poppy seeds (optional)
oil for frying
Beat eggs in large bowl, add coconut milk and water and whisk well. Add the sugar and flour and whisk until there are no lumps. Place lotus flower iron in large frying pan. Cover the flower iron with oil and play over medium or a little higher heat. Let the oil heat to 350-60°F. Remove iron and dip in oil to the very top edge of the flower iron but not over. Place in oil and lightly shake the iron to loosen the cookie. Place the iron back in the oil to heat again. Let the cookie cook for a few seconds until light brown. Remove with tongs and place on a ball of aluminum foil or a small bowl to cool into the right shape for about a minute, then remove to a tray or plate. You can stack them on top of each other. Continue dipping and frying until you've used most of the batter. This makes about 60 cookies.
