Tilapia with Chili Lime Butter
I found this recipe in a catalog and tried it tonight. It was very delicious!
Recipe:
4 Tilapia fillets
4 Tbs softened butter
1 Tbs finely chopped shallot
1 tsp finely grated lime zest
2 tsp fresh lime juice
1/2-1 tsp minced fresh or pickled Thai or serrano chili, including seeds
1/2 tsp salt
Coarsely chopped fresh cilantro for garnish
2 Tbs oil
1/2 tsp salt
Stir together butter, shallot, zest, juice, chili and 1/2 tsp salt in a bowl and set aside. Pat dry the fillets and sprinkle with salt. Heat oil in skillet over medium-medium high heat until about to smoke. Saute the fillets, turning once until golden and cooked through (4-5 minutes). Transer to a plate and serve each warm fillet with a dollop of the butter. Garnish with cilantro.
