Homemade Cream of Mushroom Soup

It's been really cold here the last week so we've been making a lot of soup.  This is comfort food at it's best and very simple and easy to make.  It beats the canned stuff any day!

Recipe:

1/2  C butter
4 chopped green onion
2-3 C chopped fresh mushrooms
4 Tbs flour
2 C half & half
2 C chicken broth
1/2 tsp salt
1/4 tsp ground black pepper

Sauté green onions in butter over low heat until tender. Add mushrooms, stir for 2 minutes. Stir in flour and cook and stir for 2-3 minutes. Remove and pour broth and half & half in steady stream, stirring gently. Bring to boil over medium heat. Lower heat and simmer, stirring, for approximately 5 minutes. Season to taste. Serves about 8.
