A Winter Salade Composee
I'm guessing this recipe is French! My daughter, Amber, made this the other night and we loved it. She got the recipe online and then I made a quick vinaigrette to go with it. The combination of flavors is divine! This recipe is versatile and should be made to your personal liking of ingredients.
Recipe:
Beets, cooked, cold and chopped or sliced
Green cabbage, thinly shredded
Mixed greens
Fennel bulb, thinly sliced
Radishes, thinly sliced
Italian parsley
Dried cranberries
Feta cheese
Fresh ground black pepper
Vinaigrette:
6-8 Tbs olive oil
2 Tbs Sherry or red wine vinegar
1 small shallot, coarsely chopped
1 garlic clove, coarsely chopped
1 tsp dijon mustard
Salt to taste
Fresh herbs if desired
Add all except oil to blender and blend smooth. Slowly add oil in a stream and blend until emulsified.
