Alyse's Strawberry Cake

Alyse, age 13, loves to decorate cakes.  This is her latest creation which happened to be delicious as well as beautiful!  She didn't measure the cream or sugar so the measurements are her approximation.



Recipe:

1 strawberry cake mix made and baked as directed.
Approximately 2 C heavy whipping cream
Approximately 2 Tbs sugar
1 quart strawberries, hulled and sliced

Alyse baked this cake the day before in two 8 inch round, parchment-lined cake pans according to the directions on the box.  After 15 minutes, remove the cakes to a plate, cover them with plastic wrap and put them in the fridge overnight.  Beat the cream until stiff, adding sugar just before it stiffens (don't over beat or you'll get butter).  Frost cakes between the layer and all over outside.  Refrigerate until ready to serve, top with sliced strawberries and serve.
