Dana's Baked Quiche
Just made up this recipe tonight for dinner and it was a delicious hit! The fresh basil is a must! Gluten/Dairy/Sugar free!
Recipe:
12 whole eggs
4-5 cups full-fat coconut milk
2 teaspoons salt
Fresh ground pepper to taste
12 oz uncured bacon, chopped
1/2 red bell pepper, cubed
1/2 sweet onion, chopped
3/4 pound brussel sprouts, shredded
1-2 tablespoons coarsely chopped fresh basil
1-2 cups non-dairy parmesan-like cheese (I use Trader Joe's)
Add bacon to large frying pan over medium heat and cook until almost done. Add onion and bell pepper and cook for about 2 minutes. Add shredded brussel sprouts and cook about 1 minute. Remove from heat. Blend eggs, salt and coconut milk together. Stir eggs into pan with vegetables. Pan spray a 9 x 13 pan and pour quiche into it. Sprinkle the basil and cheese on the top. Bake at 350°F for 45-60 minutes.
