Grain, Dairy and Sugar Free Scalloped Potatoes

I found this recipe online and adjusted it to my liking. Although I miss the cheese, these potatoes are delicious!  I have always loved potato casseroles and this one definately made my mouth happy!



Recipe

3 pounds potatoes, any kind
1/4 cup coconut oil
1/2 sweet onion, minced
2 tablespoons potato starch
2 cups coconut milk 
1 cup chicken stock
1/3 cup nutritional yeast 
1 tablespooon garlic powder 
2 teaspoons fresh chopped thyme or 1 teaspoon dried
1 teaspoon fresh chopped rosemary or 1/2 teaspoon dried
1 tablespoon salt
1/2 teaspoon fresh ground peppercorns

Preheat oven to 375°F and grease a 9×13 pan.  Peel and slice the potatoes thinly and set aside.
Heat oil in a saucepan over medium heat, add the onion and cook until translucent.  Whisk in potato starch until thickened.  Add in coconut milk, stock, nutritional yeast, garlic powder, thyme, rosemary, salt, and pepper, and continuously whisk until the sauce fully thickens. Remove from heat.  Place 1/3 of the potato slices in the baking dish in an overlapping layer, and pour 1/3 of the sauce over the potatoes. Repeat this process 2 more times.

Cover the baking dish with foil and bake for 40 minutes. Remove foil and bake 30 more minutes until potatoes are tender and the top layer is golden and crispy around the edges.
