Dairy, Sugar and Grain-Free Quick Tomato Soup

I found a recipe online that I heavily adjusted. This is delicious!



Recipe

1 (750g) carton Pomi chopped tomatoes or another brand
1 cup cashews or macadamia nuts, pinenuts or pistachios (raw or roasted and salted)
1 tablespoon salt
2-4 tablespoons fresh basil leaves
1/4 teaspoon fresh ground black or mixed peppercorns
1 medium-large garlic clove
5-8 dried dates to taste
1 small or part serrano pepper (optional)
2-3 cups chicken stock or hot water, start with 2 (if using sun-dried tomatoes use 3 cups)
1 cup coconut milk

Place everything but coconut milk in a vita-mix and blend on high until steaming hot or use soup setting.  Stir in coconut milk and serve with anything you desire.
