Biscotti

I found this recipe on-line for the best ever biscotti. I haven't eaten very much biscotti to know if it's the best, but it's the best I've eaten. The addition of butter and the amount of baking powder make it lighter and the right amount of crispness when they're done.

Recipe:

Biscotti:
½ cup butter
1 cup sugar
3 eggs
2½ cup AP flour
1½ teaspoons baking powder
½ cup white chocolate, chopped*
1 cup raw pistachios,

Egg wash:
1 egg
2 tablespoons water
2 tablespoons turbinado sugar

Caramel sauce:
½ cup water
1 cup sugar
2 tablespoons corn syrup
¼ cup heavy cream
¼ teaspoon kosher salt

Cream butter and sugar together. Add eggs and whip with hand mixer until combined. Combine flour, baking powder and salt in a separate bowl, whisk to combine. Combine dry into wet with mixer or a spatula.

When mostly combined stir in chocolate and nuts. Form into 2 equal sized loafs on a parchment lined baking tray (Use wet hands to lightly form, try not to add flour). Brush with egg wash, top with turbinado sugar. Bake at 350°F for about 35 minutes, just until barely cooked through.

Once removed from oven and cooled slightly, slice into 1/4 inch thick slices on an angle.  Transfer to parchment lined baking tray again. Bake for another 15 minutes, turning half way through. Dip bottoms in homemade caramel sauce.

Caramel sauce
Place sugar and corn syrup in a small saucepan and pour water around the edges of the sugar. Bring mixture to a boil over medium-high heat and cook for 8-10 minutes, brushing the sides of the pan with water until caramel is golden brown.

Remove the pot from heat and add the cream. Whisk until smooth, and whisk in salt.

*You can change any of the flavors in this, you can even add dried fruit instead of chocolate! This is just my favorite way of making it. Hazelnut and orange is also very delicious just add the zest of one orange and use hazelnuts instead of pistachios.
