Spanish Rice

This is not the common "Mexican Rice" because it has no tomato in it.  I had this at a restaurant and really liked it and it's very easy too!

Recipe:

3 cups long grain white rice
1¾-2 tablespoons oil
2 small-medium cloves garlic
1 large green bell pepper, diced
1 medium-large carrot, diced
3-6 cups Chicken broth*
1-2 teaspoons salt (1 if using chicken bouillon to make the broth)

Lightly brown rice in the oil then add the rest of the ingredients and cook like any other rice.

*3 cups in a rice cooker, 6 cups if your making it on a stovetop.
