Five Cheese Ravioli or Cannelloni

I adjusted this authentic recipe filling I found on-line.  It's absolutely scrumptious!  Leaving the Ricotta cheese in the recipe, I'm sure you could try different types of cheese for the Provolone and Mozzarella.


Recipe:

1 recipe Dana's pasta
8 oz Provolone cheese, grated
8 oz whole milk mozzarella cheese, grated
15 oz whole milk ricotta cheese
4 oz Parmesan cheese, grated (not from a can)
4 oz Romano cheese, grated (not from a can)
4 eggs, beaten
1/2 tsp fresh ground black pepper
2 Tbs fresh chopped parsley
Salt to taste

Make pasta according to directions.  Mix everything else together thoroughly.  I have a pasta roller with a ravioli attachment and a cannelloni attachment.  Make the ravioli or cannelloni according to your pasta machine directions.  I'm sure you can do it by hand too but I haven't made them that way.  Cook your pasta in heavily salted water until they float to the top.  Top with your favorite topping.  In the picture above I used the red sauce from my recipe for Chicken Parmesan.


Here's an absolutely delicious sauce Recipe:

6 Tbs oil
1/2 sweet onion, chopped or minced
2 large cloves garlic, minced
2 sweet bell peppers, any color, cubed
1 lb Dana's sweet Italian sausage
2 cans Italian-style stewed tomatoes, blended
1 Tbs sucanut
Salt to taste
1 Tbs fresh basil leaves, chopped or 1/2 tsp dried basil

Heat oil over medium heat.  Add sausage and break it apart roughly.  Add onion, garlic and pepper and cook until the sausage is done and the vegetables are tender (may need to turn the heat down).  Add the rest of the ingredients, cover and simmer for 15 minutes.



Here's another delicious sauce Recipe:

4 Tbs butter, divided
2 Tbs oil
2 C cremini mushrooms, cut into medium pieces
4 cloves garlic, thinly sliced
1 large shallot, minced
2 Rosemary springs, chopped
2 Tbs white grape juice
1 tsp white wine vinegar
1/2 Tbs flour
1/3 C salted water (pasta water)
2-3 Tbs heavy cream
3 Tbs grated Parmesan cheese or more
Freshly ground black pepper to taste
Salt to taste

Put butter and oil in frying or sauce pan over medium-high heat.  Add mushrooms, rosemary, garlic and shallot and saute until tender.  Sprinkle in flour while stirring.  Add grape juice, vinegar and pasta water and allow to thicken.  Add salt and pepper to taste and then add cream and cheese.  Remove from heat and serve over pasta.
