Chicken & Potato Soup

I got this recipe from a newspaper clipping years ago.  It's very easy and quick to make and super delicious!

Recipe:

8 oz bacon, cooked crisp (optional)
4 C diced potatoes
1 medium onion, coarsely chopped
4 Tbs vegetable oil and/or bacon fat
1 1/2 C baked or cooked chicken, chopped
1 C chicken broth
2 tsp parsley flakes
1 1/2 tsp salt
1 can evaporated milk

In large saucepan brown potatoes and onion in bacon grease and/or oil. Add, chicken broth, parsley and salt. Heat to boiling, reduce heat, cover and simmer until potatoes are tender. Stir in milk and chicken. Heat to simmer but not boil. Serve with crumbled bacon pieces if desired.
